Mango photo Mango
Select mangos that are firm, plump and fresh-looking and that have a pleasant, spicy aroma at the stem end. If there is no scent, the fruit will be flavorless. Ripen at room temperature in a brown bag until the fruit yields slightly to pressure, like a ripe avocado. As the mango ripens, the skin color intensifies (green skin mangos excepted.) Once ripe, a mango may be refrigerated for several days.

A peachy aroma indicates ripeness, as does softness; choose a peach that gives slightly to palm pressure. A red blush indicates variety and not ripeness. There are two main types of peaches, determined by whether the flesh clings to the pit (clingstone) or breaks free of it (free stone). There are also yellow- and white- fleshed varieties.
