Look for bright green, fresh-looking spears with compact tips. Avoid angular or flat stalks that are woody. Use asparagus as soon as possible after purchase. Store asparagus loosely covered in the refrigerator. To maintain freshness, wrap a moist paper towel around the stem ends or stand them upright in two inches of cold water.

To remove the fibrous stalk end, hold the stalk by each end and bend it until it snaps in two. Steaming requires minutes depending on stalk size and freshness.

Lemons are picked green in the cold months and then left to ripen and cure in storehouses that make it possible to have a year-round lemon supply. Storage mellows the acid, thickens and toughens the skin and gives the lemon a bright silky yellow finish. Avoid lemons with a darker yellow or dull color or with hardened or shriveled skin, which indicates old age.
