The pineapple, which originated in Brazil, is a multiple organ that forms when the fruits or berries, the indented "eyes" of a hundred or more separate flowers, coalesce together. Its high sugar content and lush flavor make it one of the most popular tropical fruits. The pineapple is a symbol of hospitality.
BUYING TIPS:
A sweet, fragrant aroma is the single most important key to selecting a ripe pineapple. A ripe pineapple smells sweet, especially at its base and feels firm when squeezed. Pineapple has no stored starch so its sweetness doesn't increase after it is picked, though its acidity decreases when it is stored at room temperature. Pineapple is available throughout the year, with peak supplies in the springtime.
STORAGE:
This fruit is compromised by refrigeration; store in a dark, cool (50-65 degrees) pantry.
